Rasmalai mug cake is a fusion mug dessert where vanilla sponge cake gets the flavour of indian dessert rasmalai and topped with whipped cream and nuts prepared in less than 2 minutes.
Rasmalai cake is currently a trending cake..Basic vanilla cake gets a new flavour by combining with the indian dessert Rasmalai.. Rasmalai is a rich dessert it has a soft rasmalai balls and thick sweetened milk ,rasmalai balls are soaked it this sweetened milk… we are using this rasmalai to flavour our sponge cake…
When I open Google to search for any variety cake recipe then we can see rasmalai cake is a current trend.. where sponge is soaked with rasmaai milk and layered with rasmalai balls and cream… It really tempted me to try it but it will take its own time of baking ,cooling, icing but I dint have patience In order to satisfy my sweet crave and give a new twist to the rasmalai cake trend I ended up with these quick fix mug cake.. I have already prepared my rasmalai and is chilling in fridge… I just whipped up the ingredients for vanilla mug cake by the way it’s eggless and microwaved and drizzled with the rasmalai and topped with the whipped cream and nuts…
I have been getting many request to post eggless version of my cake recipes ..many of them asked for eggless version of hot milk sponge cake and marble sponge cake.. so when I wanted to try this version of mug cake I was sure that I should try on eggless version and it turned out to be perfect… soft spongy with the flavour saffron ..I felt that the single mug itself was rich with cream ,milk and nuts…I’m sure you will love it as I did and give it a try …

Rasmalai balls /rasgullas-soaked in rasmalai
Rasmalai -sweetened thick milk with saffron and nuts
whipped cream -I have whipped the cream by adding rasmalai.

- 5 tbsp all purpose flour
- 3 rasmalai balls(soaked rasgullas)
- 5 tbsp Rasmalai
- 2 tbsp milk
- 2 1/2 tbsp butter
- 1/2 tsp baking powder
- 1/2 tsp vanilla essence
- 1 tbsp sugar
- pinch of salt
- whipped cream (Check above note)
- chopped pistachio
Ingredients

- In a microwave mug Add butter,rasmalai, milk, vanilla essence and mix it well
- Then add in sugar, flour, baking powder and salt mix it well until combined with no lumps.
- Add chopped rasmalai balls to the batter mix well and microwave it for 1 minute 30 sec until top is firm and cooked well...(time depends on your oven )
- Remove from microwave poke the cake withskewers or tooth pick then add the remaining rasmalai and get it soaked
- Finally garnish wirh whipped cream ,chopped rasmalai and nuts.
- serve chilled
